After starting out as a traditional butchers, four generations ago, Scotts of Carshalton in Surrey is now just as much in demand for providing party, events and wedding catering. Its reputation for top quality produce, combined with this new expansion, which includes a deli counter, has seen the business boom under current owner Alan Dye.
Alan now receives up to five wedding enquiries a day. They often cater three midweek events for up to 500 people, and have capacity to cover two large weekend weddings and eight smaller events.
The menu is extensive with catering options including full BBQ hog roasts, hot and cold buffets, carveries and canapés.
Scotts' kitchen set-up comprises two RATIONAL SelfCookingCenter® 201E, a SelfCookingCenter® 101E and a VarioCookingCenter® 112T. The SelfCookingCenter® 201E models provide large cooking capacity, capable of holding up to 20 1/1GN containers simultaneously, while the 101E is suited to smaller quantities of up to 150 meals a day.
They are complimented by the VarioCookingCenter® 112T, which has two 14 litre pans.
“We've only got a tiny gallery kitchen, so we needed cooking equipment that could multi-function," says Adam.“Each week we roast about 30 hams and other joints as well as other dishes in our SelfCookingCenter®, while our VarioCookingCenter® is also in constant use for everything from boiling pasta to frying off mince. The RATIONAL automatic controls mean that everything is cooked perfectly and consistently.”
